I have not yet learned the art of making gumbo in small amounts. I'm gonna be eating this for the next two weeks.

Know that you are not alone. My partner makes absurdly fantastic stews and curries--but in batches so big that we eat them for weeks and give away as much as we can to friends and family. AI must admit it's not much of a downside.

Can't you freeze some of it? My mom used to do that, with big pots o' tasty stuff.
