Sorry, only veggie book I have any knowlege of is that Laurel's Kitchen has much tastiness contained therein...

I can't recommend a book...
Uncle Ben's Black Bean and Rice soup mix is awesome and provides a non-meat complete protein. I like to add tabasco to it.
I also really like it with mexican cornbread...lemme know if ya' want me to hook you up with a recipe.

I have lots of vegetarian cookbooks leftover from my vegetarian daze. I think the only one that talked about nutrition was "Diet for a Small Planet". The "Diet For a Small Planet: 30th Anniversary Edition" is entitled Hope's Edge (http://www.dietforasmallplanet.com/). I suspect the recipes are an improvement over the heavy fare from 30 years ago. "Diet For A Small Planet" was good because it discussed the politics of food, as well as nutrition. I can't tell if "Hope's Edge" does or not. It has good reviews, though.

This looks like a good siteNutrition: The Vegetarian Resource Group (http://www.vrg.org/nutrition/). I still mostly cook vegetarian.

Oops. I should have re-read before I posted that last one. "Hope's Edge" looks like it definitely covers food politics, but I'm not sure about nutrition.

As I remember, US vegetarian thinking from about 30 years ago was a bit lock-step about getting enough protein. So, vegetarian food from that era was a bit heavy on dairy and eggs. I think protein needs have been downgraded since then.

One year three different vegetarians on my christmas list all asked for the Moosewood cookbook, and I have noticed it on the shelves of many many vegetarians. I would consider that a recomendation

I have a couple of books that Sheryl gave me for people who are slowly transitioning to vegetarianism, called Almost Vegetarian and Almost Vegetarian Entertaining, and I have a copy of Recipes for a Small Planet that I would be happy to give you, since I almost never use it.

The Toronto Vegetarian Association (www.veg.ca) has lots of info, including a vegetarian starter kit and a very good recipe book.
